Choose an open-source model, and deploy it on a rented machine in the cloud. Your data travels to the cloud. You trust in the cloud provider to keep your data private.

Choose your open-source model. But instead of deploying it in the cloud, you deploy it on the server that you control. You trust nobody but yourself.
